Gu-Zoni

Gu-Zoni is a local dish of Shimabara. While standard zōni is a simple soup with rice cakes, Gu-Zoni includes a wide variety of ingredients (gu means “many” or “numerous” in the local dialect). These typically include chicken, conger eel, lotus root, burdock, dried tofu, shiitake mushrooms, and a fried egg.

According to legend, this dish originated during the Shimabara Rebellion. It is said that the rebel leader, Amakusa Shirō, ordered his besieged forces to gather every available ingredient from the mountains and sea to create a nourishing one-pot meal to sustain them.

Kanzarashi is a traditional sweet consisting of small rice-flour dumplings served in a special syrup. The dumplings are chilled in cold spring water—a process known as kanzarashi, which gives the dessert its name. The syrup is made from sugar and honey. When eaten, it offers a delicate sweetness and a delightfully smooth texture as the dumplings slide down the throat.
