Nakatsu Karaage (Deep-Fried Chicken)
Nakatsu Town is known as “the Sacred Place of Karaage.” There are dozens of karaage shops in Nakatsu City. Before deep-frying, the chicken is marinated in a special sauce based on soy sauce or salt, with garlic, ginger, and other ingredients.
There are several theories about why karaage became popular in Nakatsu: (1) there used to be many poultry farms, (2) returning soldiers from Manchuria brought the recipe, and (3) a deli shop first served it and gained a good reputation.

Suppon, Soft-shelled Turtle
Ajimu Town, located in Usa City, produces soft-shelled turtles through farming. Several restaurants serve a suppon hot pot dish. Some foodies say the suppon hot pot dish is the best nabe dish because of its rich taste and soft texture.
