Akaushi Don

In Aso, one of the four wagyu species, Akaushi (brown cows), is raised in large fields. Akaushi Don is a rice bowl topped with a generous amount of sliced Akaushi beef, grilled medium-rare. The red meat is juicy with flavorful, good fat. Additionally, a half-boiled egg is often placed on top of the beef.

Takana Meshi

This dish is fried rice with Takana pickles. Takana is a type of leafy vegetable produced in and around Kumamoto. It is often pickled and used in various dishes. It is made by frying rice with pickled Takana and egg, or simply by mixing them together.

Dago Jiru

Dago are flour dumplings, which are normally called Dango. Dago is the Kumamoto dialect word. It is said that very busy farmers, working from morning to evening, came up with this as a food to make quickly and easily. It is a miso soup dish with dumplings and various vegetables like taro, shiitake mushrooms, daikon radish, burdock, and carrots.
