Grown in the rich natural environment of Itoshima, Itoshima oysters are famous for their mellow, sweet flavor. Many oyster barbecue huts can be found at five local fishing harbors.
These huts operate only during the season, from late October to March or April. They are simple in construction—large vinyl tents filled with several dozen tables, each equipped with its own grill. Visitors can enjoy a variety of fresh seafood, including oysters, sazae (sea snails), prawns, and fish. The huts provide grills, tongs, cotton gloves, and other tools, so you can try grilling your seafood yourself.


How to grill oysters
1. Place the oysters on the grill with the flat side down.
2. The juices will run off the round side, so make sure it faces away from people.
3. Be careful when opening the oyster shells, as they will be hot. Cook the center of each oyster at 85–90°C (185–194°F)for at least 90 seconds to ensure it is fully cooked.
4. When opening the shells of grilled oysters, watch out for hot cooking juices that may spill and cause burns.
